Some of you who know me know that when I'm creating a new dish I typically don't use recipes. I tend to do everything by taste and smell. This is one of those recipes where that happens. Using the list of ingredients, create your own version of my Green Man Salad - make it to your taste buds liking :)
Here's What You'll Need:
• spinach
• kale
• arugula
• avocado
• green peas
• asparagus
• broccoli
• pistachio
• chickpeas
• artichokes
• chia seeds
• nutritional yeast
• sea salt
• black pepper
• short grain brown rice
• ginger tahini dressing ( recipe below)
For The Salad:
Cook the brown rice according to the package. Let cool
Combine all ingredients except nutritional yeast in a large salad bowl and mix together. Mix in dressing or leave on the side. Top with nutritional yeast.
Ginger Tahini Dressing:
2 garlic cloves, chopped
2 inches of fresh peeled ginger, chopped
1 tablespoon of Tamari Sauce (or Nama Shoyu or Soy Sauce)
2 tablespoons of lemon juice
2 tablespoons of Tahini
1 tablespoon of olive oil
2 tablespoons of water
Combine the garlic and ginger in a mini food processor or blender. Blend well. Next, add in the remaining ingredients and blend until creamy. Add more water if you would like a less thick dressing.
